My car was badly damaged after carrying out gardening/landscape work, but who can and may I hold liable? The owner of the apartment complex (where I rent the apartment and parking space) or the company that carries out the landscaping? I rent an apartment through private rental, and in addition I also rent a parking space on the same ground of the apartment through the same private individual. The landscaping is outsourced to a gardener. Due to rough work, my new car is damaged all around. But who can and may I hold liable?

I advise you to hold the landscaping company liable. They apparently caused the damage. You can also try to hold the landlord liable because he is responsible for damage caused by companies working for the landlord, simply put, for work that the landlord has to carry out.
