Change Guardianship & Will: Information & Costs

I had a question about guardianship. My parents are my son's guardians. and we want to change that. How should we do that and what are the costs? We also want to describe a will. If something happens to us, my children will go to my parents or my brother, sister-in-law. and what are the costs of that?
