First of all: I am not a lawyer, so I cannot answer the specific question you are asking. However: for a mortgage application, you can black out any part of the payslip that is not relevant to the application with a permanent marker or otherwise censor it if you do not feel comfortable sharing this information. The fact that this information is on the payslip does not mean that you also have to share it with agencies that need part of the information on that slip.
